Feds take aim at high meat
costs, but for the long-range
A long-range
federal effort to permanently bring down
wholesale costs of meat and poultry is about to be put into
action, the Biden administration revealed on 9/26/22. The plan
calls for fostering competition in the highly concentrated beef,
pork and poultry processing industries by funding the startup of
rivals to the four companies that currently control what
President Biden says is 80% of the nations meat supply.
U.S. job openings drop
sharply, labor market starting to loosen
U.S. job openings
fell by the most in nearly 2 1/2 years in August, suggesting
that the labor market was starting to cool as the economy
grapples with higher interest rates aimed at dampening demand
and taming inflation. Despite the 5th month of decreases in job
openings this year reported by the Labor Department in its Job
Openings and Labor Turnover Survey, on 10/4/22 vacancies
remained above 10 million for the 14th straight month.
The share of people quitting
their jobs is also an indicator of workers' confidence that
employment opportunities abound. About 4.2 million
people gave notice in August, slightly more than
during the previous month. That left the rate of people quitting
their jobs - the number of people voluntarily leaving their jobs
divided by total employment - only slightly below the 3 percent
it reached at the end of last year, the highest reading on
record.

- 20 oz. can crushed
pineapple, drained
- 1/2 c. white sugar
- 2 T. cornstarch
- 1/4 c. cold water
- 2 eggs, lightly beaten
- 1 T. vanilla extract
- 1 T. butter
- 1 tsp. ground cinnamon
Preheat oven to 350 degrees F.
Grease a 8" x 8" baking dish. Mix the pineapple,
sugar, cornstarch, water, eggs and vanilla. Pour mixture into
the pan, then top with pats of butter. Sprinkle with cinnamon.
Bake for 1 hour, serve warm.
Makes a great side dish at
brunch, or with a ham, or as dessert with a topping of whipped
cream.
Baked Oatmeal
- 1/4 c. butter, melted
- 1/2 c. brown sugar
- 1 tsp. baking powder
- 1/2 tsp salt
- 1 egg
- 1/2 c. milk
- 1 1/2 c. oats (quick or
old-fashioned)
Preheat oven to 350 degrees F.
Cream butter, brown sugar, baking powder and salt. Mix in egg
and milk. Fold in oats. Bake in 8" x 8" glass baking
dish for 30 minutes or until edges begin to brown. Serve with
banana slices or fresh berries on top and with warm milk to pour
on top. Serves 6-8.

celebrated their grand opening September 23, 2022 and
is open for Penn State home game weekends this
season. The Apple Pony Inn is owned by Tom and Rachel Foster
who moved to Pennsylvania from Colorado in 2021 with their two children. Tom
is a computer engineer and Rachel is a public health
nurse. The Apple Pony Inn will be open for full-time
operation in the summer of 2023 when Rachel ends her current
position with Penn State and moves on to full-time
innkeeping.

After enduring personal tragedy during the
renovations, Jim Wendel finally completed major renovations on The Hygrade Inn,
a luxury boutique hotel in the heart of the PA Wilds. Currently
retired from a career in corporate America, Jim and his husband
Matt Kowalchik manage the day-to-day and management operations of
the Inn.
With four guest rooms, each with a full en-suite
bathroom, the Inn offers a full breakfast for guests, as well as
optional dinner, both based on a small selection which is offered
(and changes) daily. With a commercially licensed
kitchen, Jim and Matt make sure it’s used to its fullest. They
make different flavors of ketchup and jams which they use for
meals, as well as sell to guests.
